Sorry, guys – no recipe today. Hopefully I’ll get into the swing of cooking again once I’m home so I have something to post for next week!

Today – my last full day in Sydney, I:

Hit some local markets

Wandered a hipster neighborhood

Cruised through Darling Harbour again, then on the Kings Wharf and Bangaroo

Then back to Circular Quay and the lie of the train “home” – service was out, so I made my way up a hill and down 3 blocks to catch the bus.

Then back out for a late dinner somewhere Asiany and porky.

Took the train out to the Blue Mountains for some very light hiking

Then back to town to explore Finger Wharf

And get screamed at by wild, loose cockatoos

Then back to the Opera House to catch the sunset light show

Today’s adventure:

The Coastal Walk from Bondi to Coogee Beaches

Today’s adventure:

Hyde Park Barracks Museum (which was awesome)

A stroll through the Botanical Gardens

Then a feet to Watson’s Bay to see the lighthouse and Gap (aka the entrance to Sydney Harbour)

Another 22,000 Steps in the book – too bad I’m not doing a Walk To Mordor challenge!

Taronga Zoo

Where I saw giraffes

Checked out their killer view

Was told who’s boss by a big chimpanzee

And got up close with local bird life (and spider monkeys!).

Then it was back on the ferry, off to Cockatoo Island to learn about ship building (pics to come from the big camera)

And back to Circular Quay to see the Opera House up close.

Happy Birthday to my love – though we didn’t get to spend your day together this year, I love you and you were of course all up in my thoughts as I hit the CBD (Central Business District) for some semi-practical retail therapy.

Ferries to Manly Beach & Milson’s Point + the Rocks Discovery Museum

Keto Ramen

If you hadn’t noticed, I’ve been on a Japanese kick again lately, and I’m determined to lick this delicate-yet-complex flavor profile and bend it to my low carb ways (muahaha).

Gluten-free, keto

Keto Ramen

2 c. water
1 pkg. shiritaki noodles
2 Tbsp. dashi broth starter
1 tsp. white miso
2 Tbsp. wakame
6 ounces white fish
2 Tbsp. sesame oil
1 c. bok choy
1 Tbsp. soy sauce, ponzu, tamari or coconut aminos
1 tsp. rice vinegar
Sriracha
Furikake (I love the varieties with bonito)
Salt
White pepper

Season the fish with salt & white pepper and sautee in 1 Tbsp. sesame oil until cooked through. Flake into a large bowl. Add 1 Tbsp. sesame oil to the bottom of the bowl, along with a squirt of sriracha.

In a saucepan, stir the dashi stock into the water and being to a boil. Add the miso and stir. Add the wakame and bok choy.

Drain and rinse the shiritaki noodles. Add to the pan.

Boil 3 – 5 minutes to cook the noodles and veggies. Add the soy and vinegar.

Pour the soup into the bowl and top with furikake to serve.

Makes 1 big serving

Walked Darling Harbour, did the Aquarium (I saw a mantis shrimp!), took the circuitous route to a Viking-themed restaurant for a short rib trencher and fat-washed alcoholic beverage do some sort, then back. Hit my 10,000 step goal by lunch again today.

More photo journaling coming soon – once I get home, decompress, and process what’s on my big camera.

Weekly Update & a travel vlog hitting the YouTubes when I get a strong enough Wifi signal.
