Massaged Kale & Pomegranate Salad

This recipe is also a crowd favorite and made quite the hit at my last potluck. Vegetarian, vegan, paleo – it’s endlessly friendly (unless there is a nut allergy) and would taste great with some pecorino cheese for the lactose tolerant.

Massaged Kale & Pomegranate Salad

10 ounce bag washed and cut kale
1/2 red onion, diced (about 1/2 a cup)
5 ounces pomegranate arils
3/4 cup pecans, crushed
1 apple, julienned
2 tsp. Dijon mustard
2 tsp. apple cider vinegar
4 glugs avocado or olive oil
1 tsp. maple syrup
Big pinch Kosher salt
1 tsp. black pepper

Whisk the dressing ingredients (everything from the mustard down) in a small bowl. Add all the other ingredients to a large bowl. Combine, taking the time to massage the dressing into the kale and other salad ingredients so every leaf is coated.

Serves a bunch 

Keto Pecan Stuffing

I was so excited about this recipe when I saw it on Pinterest. 

This is pretty much everything I want in stuffing – with none of the cloyingly dry grossness that is the bread.

Keto Pecan Stuffing
Based on Low Carb Pecan Stuffing by Simply So Healthy

4 ribs celery
1/2 a white onion
8 – 10 ounces pecans
Fresh sage
Fresh rosemary
1 Tbsp. fat of choice (I used bacon fat)
1 Tbsp. unsalted grass-fed butter
Himalayan salt & black pepper

Thinly slice the celery and dice the onion. Add to a large pan with the Tablespoon fat over medium heat. Sautée until the veggies are softened.
While the veggies work, mince the herbs (you’ll want 3 – 4 Tbsp. in total).

When the veggies are softened, add the herbs, pecans and butter. Sautée until the pecans are starting to burn. Hit with salt & pepper to taste.

Want to take this stuffing from delicious to ;)&(@,!?)’ delicious? Add the drippings from a turkey and cook an additional 3 – 5 minutes. This dish is great without, but with …. holy shit, this is good.

Serves 4 or so as part of a big holiday spread. 

Caramelized Squash with Pepita Pesto

This was a big hit at a potluck – the pepita pesto was addictive, and I’m sorry to have only made the one squash — there was enough pesto for two, and enough demand for more.

Caramelized Squash with Pepita Pesto

For the squash

1 butternut squash – peeled and cut into roughly 1-inch chunks
1 Tbsp. butter, melted
1 Tbsp. chili powder
1 Tbsp. smoked paprika
1 Tbsp. brown sugar
1 Tbsp. Kosher salt
2 tsp. black pepper
2 Tbsp. oil of choice

Preheat your oven to 375 and line a baking sheet with foil. Prep your squash if not done already, and combine the rest of the ingredients in a small bowl. Pour over the squash and toss to combine. Bake for 20 minutes, or until the squash is soft and starts to brown.

Meanwhile, make your pesto.

For the pesto

1/2 cup raw pepitas
1 hand full arugula
4 cloves garlic
Juice of 1 lime
Big pinch Kosher salt
Few cracks black pepper
4 glugs olive or avocado oil

Blend all ingredients in the bowl of your food processor. If you find the pesto is too thick, add a little more oil.

Toss the squash with the pesto to serve.

As written, this recipe would make enough for 2 dinner portion sides – maybe 3; if you’re bringing somewhere, consider doubling the squash. 

Paleo Creamed Spinach

This recipe is decadent tasting yet healthy. Makes a perfect side to some bacon-wrapped chicken.

Paleo Creamed Spinach

10-ounce bag frozen chopped spinach

1/2 – 3/4 cup your preferred milk (I used an almond/cashew blend – be careful to use original unsweetened!)

1/4 cup caramelized onions

2 Tbsp. grass fed butter

1 – 2 Tbsp. arrowroot powder (or if you don’t have it: cornstarch)

1/2 tsp. ground nutmeg

Kosher salt & black pepper

Make a slurry out of the milk and arrowroot powder like you would cornstarch & milk. Chop the onions.

In a large pan over medium heat, bring the slurry to simmer. Whisk in the butter. When the mixture is thickened a bit, add the Spinach and onions. Add the nutmeg and hit with a big pinch salt + a few cracks pepper.

Sautée, stirring frequently, until the spinach is warmed through and creamy but not soupy.

Serves 2 for dinner as a side 

Peach & Sesame Salad

As written, this recipe makes a great Summer snack. If you want to bulk it up to meal hardiness, add some sliced tuna, chicken or serve alongside a nice burger.

Peach & Sesame Salad

1 cucumber
1 small peach
1 tsp. Sesame oil
1 – 2 tsp. Mixed seeds (I used sesame and chia)
1/2 tsp. Rice vinegar
1 tsp. Sriracha
1 green onion
Kosher salt & black pepper

First, spiralize your cucumber into noodles.

Slice the green onion thinly and add to the “noodles”.

Chop the peach and add. Toss to combine.

Drizzle with the sesame oil, sriracha and rice vinegar. Toss with a big pinch kosher salt and a few cracks black pepper. Sprinkle with seeds and serve.

Serves 1 as a snack or light side 

Warm Brussels Caesar

This dish makes a fantastic warm salad for a night when you *want* the virtue of being able to call at least half of dinner a “salad” but you don’t actually want to *eat* a cold salad. It counts: it has dressing.

Warm Brussels Caesar
Based on Warm Brussels Caesars with Bacon Ciabatta Croutons from How Sweet Eats

1 lb. brussels sprouts
2 ounces (4 slices) bacon
4 large cloves garlic
3 Tbsp. almond, cashew or coconut milk (I used cashew)
2 Tbsp. parmesan cheese (optional. I used sheep parm)
1 Tbsp. dijon mustard (I used Maille whole grain)
2 tsp. rice wine vinegar
1-1/2 – 2 tsp. anchovy paste (equals to about 4 anchovies)
Juice of 1/2 a lemon
1/3 – 1/2 cup oil (I used walnut)
Big pinch Kosher salt
Few cracks black pepper
Optional but appreciated by bread eaters: Fresh croutons

Chop the bacon and put in a large, heavy skillet over medium heat.

While the bacon is browning, slice the root end off your brussels, halve lengthwise and cut each half into about thirds. Set aside.

When the bacon is browned, remove to a paper towel to drain. Add the brussels to the fat left over in the pan (1 – 2 Tbsp. if more fat; drain some, if less; add some). Sprinkle with salt and pepper.

While the brussels are cooking, prepare your dressing. In the carafe of a blender, bowl of a food processor, or cup of an immersion blender combine the milk, mustard, vinegar, anchovy paste, lemon juice, a big pinch of salt and a few cracks of pepper. Mince the garlic and throw in. Blend, drizzling in the oil as you go until an emulsion forms. Taste. Add the cheese if you’re eating it and buzz again to combine.

Serves 3 for dinner as a side (for something like nice pan-sauteed pork chops), with more dressing left over. If you want to serve this salad as a stand-alone dish, add a couple handfuls of leftover rotisserie chicken and top with a fried egg. As a stand-alone, this amount should serve 2.  

Maple Bourbon Bacon Brussels

Drool. This dish is fantastic, and a real show-stopper when shared with friends in some sort of seasonal bacchanalia.

Maple Bourbon Bacon Brussels

1 lb. brussels sprouts
1/2 – 1 lb. bacon
2 Tbsp. grainy mustard (I prefer Maille)
1/2 tsp. grated nutmeg
Sprinkle something hot (I used dried ghost peppers)
Kosher salt
2 Tbsp. apple cider vinegar
Bacon fat or other Fat Of Choice
1/4 cup bourbon
1/4 cup maple syrup

Brown the bacon in your largest pan over medium heat. While your bacon is browning, shred the brussels. Remove bacon to paper towels – don’t ditch the fat. If you have a bunch of kinda burnt bacon bits, pour the fat off into a bowl or cup, deal with the bits, and put the fat back into the pan and the pan back over heat.

Add the shredded brussels to the pan with the fat, along with 2 generous pinches Kosher salt. Stir to combine fully. Add the mustard and stir to incorporate fully. Add the nutmeg and hot stuff; stir again.

Sautee, stirring frequently, until the brussels begin to brown. If your brussels look a little dry during this time, add more fat – more fat = more better; it’s the holidays.

When the brussels are a little browned at the edges, add the apple cider vinegar, bourbon and maple syrup. Stir to combine. Sauté until the liquid cooks out and the brussels are as browned as you’d like, making sure to stir frequently so nothing burns.

Crumble the reserved bacon and sprinkle over top. Taste and add more salt/heat/acid as needed.

Serves a bunch as a holiday side

Creamed Corn with Chipotle Oil

What to do with late-season corn when you’re suffering from corn fatigue? Grind it up and make a great base for some slow-cooked meat!

Creamed Corn with Chipotle Oil

4 ears corn, 3 – 4 cups kernels
2 Tbsp. ghee or butter
2 cloves garlic
1/2 can coconut milk
Kosher salt
2 tsp. adobo sauce
2 Tbsp. avocado oil

Strip the corn from the cob. Add to a pot with the ghee and cook over medium heat until beginning to brown. While the corn is cooking, peel and smash the garlic.

When the corn is browned in spots, add the garlic, 2 big pinches salt and the coconut milk and kick the heat down – simmer 10 minutes.

While the corn is cooking, blend the adobo sauce and avocado oil together.

Drizzle over the corn and serve.

Serves 3 – 4 and makes the perfect foil for last week’s short ribs.

Fiery Roasted Squash

This makes a nice departure from roasted sweet potatoes as a mostly hands-off weeknight side.

Gluten-free, paleo; vegetarian & vegan if you swap the fat

  

It’s not as burnt as it looks – promise – I got a little carried away with my Hipstamatic app.

Fiery Roasted Squash

1 kabocha squash
2 Tbsp. melted ghee or other fat
2 Tbsp. spicy harissa (I use Mina)
2 tsp. ground cumin
2 tsp. maple syrup
1 tsp. ground coriander
2 big pinches Kosher salt

Preheat oven to 425 F. Peel and chop the kabocha – kabocha isn’t the easiest squash to peel, I used a knife and kind of shaved the skin off.

Prep a baking sheet with foil.

Toss all ingredients together and spread out into a single layer on the baking sheet.

Bake 20 minutes, flip, and bake an additional 20 minutes until roasted.

Serves 4 as a side

Sesame & Pear Kale Salad

This little number is quick to whip up and bursting with healthy flavor.

Sesame & Pear Kale Salad

1 bunch kale
1/2 an Asian pear
2 serrano peppers
2 tsp. sesame oil
2 Tbsp. sesame seeds
2 tsp. ketjap manis or coconut aminos or soy sauce
1 tsp. honey
2 Tbsp. rice vinegar

In a large bowl, add the washed and chopped kale, the chopped pear, and the de-seeded and diced chilis.

In a small bowl, whisk everything else together.

Combine, massaging the dressing into the kale with your fingers.

Serves 2 for dinner
