Keto Day 6 of 30

Today was better. It’s the first time we ate out, and I’m happy to say lunch went well.

I still need to work on jiggering my thinking – too little fat and too much protein today has me a little hungry after 2 Tbsp. coconut butter after dinner. 

Breakfast

Coffee with almond milk & a serving of fat bomb.

Lunch

Ate out! Had a classic Cobb salad with grilled chicken and no cheese at SmashBurger. 



Dinner

Dammit. Forgot to take a pic again. Made broccoli & ground beef bowl seasoned with garlic powder, onion powder, bacon fat & butter. Delicious. The DH had double meat, double fat & cheese.

Snack

2 Tbsp. Coconut butter & 1 Tbsp. Guacamole while batch cooking.

Keto – Day 1 of 30

Today was a learning experience for sure. Apparently, I *don’t* need to eat protein at every meal. Bummer.

Breakfast

Revised keto-friendly smoothie (which actually wasn’t half bad once I added the stevia) + coffee with almond milk.



Lunch

Big salad with rotisserie chicken, cucumbers, green onions and tahini dressing.



Dinner

Pan seared salmon with cauliflower mash. The DH’s had added bacon and added fat.

Mine is on the left; the DH’s has an added 2 Tbsp. fat and 2 slices bacon

Snack

1 (delicious) fat bomb block.

I’m Doing Something Crazy With My Diet Again

Hold the cat – I’m doing something crazy with my diet again. And no, I’m not doing *another* Whole 30.

Instead of resting on my laurels, this month I’ve decided to break from my long-standing macros and give Keto a try. The DH is itching to give it another shot, I want to knock off the last few stubborn pounds I acquired as a student, and I’m curious to see how my body will react.

So, let’s take a dive – shall we?

First thing’s first. This is where I’m pulling my keto macros from:

And what are those macros?

1318 kcal

20g net carbs

70g protein

106g fat

That breaks down to 6% carbs, 21% protein and 73% fat.

Why?

According to the calculator, I have a total energy expenditure of 1757 kcal per day (127 lbs. weight / 31% body fat = 1229 BMR, 123 TEF & 1351 base energy expenditure + a lightly active lifestyle).

To lose weight on the track we’ve chosen, I need to operate at a 25% deficit, which would put me at 0.8g/lb. protein and 20g net carbs.

You keep saying “net carbs” wtf is a carb net? Net carbs are total carbs – fiber; keto people like fiber.

Wait … those macros look kinda familiar.

If you’ve been following my macro obsession for awhile (holla, Nerd friends!), you may think these numbers look familiar. They are. My “regular” macros (based on Mark Sisson’s Primal Blueprint plan: http://www.marksdailyapple.com/definitive-guide-to-the-primal-eating-plan/)

Have me eating:

1500 calories or less

100g or less fats

100g or less carbs

70g or more protein

These macros have been my besties for a couple years now and I know they work. They’re easy to follow, and when I’m actually doing what I need to be doing they at least keep my weight stable.

Erm … so, if keto is so similar to what you already do, why subject yourself to crazy making rules?

I’m treating this foray into ketoland like a Whole30 – I’m hoping to get back to a mindful state of food consumption, rein in the bad habits that have crept into my diet over the past few months, and get back to eating what I know I’m supposed to be eating. If keto is like W30, I’ll quit thinking of excuses to ‘just have a damn sandwich’, things like popcorn won’t be a major focus of my weekend, and I will stop looking for excuses to have things like dessert or drinks or a PSL or fries.

Oooookaaaay … what does a keto day look like, food-wise? I’m betting your favorite breakfast is out.

Unfortunately, I have to say sayonara to my favorite green smoothie – at least until I can figure out how to make it not taste like swamp water with no apple.

Luckily, I have a best friend who is already doing keto and kicking ass at it. She has other restrictions (and funny enough – in looking back at my Whole30 posts to see how I want to format this Keto series, she is the whole freaking reason I did W30 in the first place because apparently she’s *always* been about 5 steps ahead of me), but this is the gist of what she’s eating every day:

Rocket fuel latte for breakfast

Bone broth or an Epic bar for lunch (depending on whether she’s at home)

A palm worth of protein + veggies cooked in lard for dinner

That looks like maybe enough food for me but definitely not enough food for my DH, so the general plan looks like:

Rocket fuel latte for breakfast

Epic bar + snack nuts if I’m out for lunch

Veggies + chicken if I’m home for lunch

Protein + veggies for dinner

Bone broth as a snack as needed

Hard boiled eggs as a snack as needed

Salumi for a snack as needed

Fat bombs for an emergency ‘I need more calories and/or fat after dinner’ ration

My DH will want to add guac and bacon to that list; and we may end up doing eggy muffins instead of rocket fuel for breakfast. Or he may, at least. I love my coffee too much to give it up.

Speaking of … this is going to make getting coffee out a pain in my damn ass again. I need to see what the keto peeps do about this.

I also may revitalize my keto protein bomb smoothies I was making last fall. Those bitches were delicious and more than filling for a meal. Like they’d make an awesome lunch on the go for both of us.

For reference, I’ll be feeding two of us in this experiment. My macros are above; the DH’s are as follows: 1982 kcal, 20g net carbs, 121g protein, 158g fat

This plane is heading the wrong way.

A Second Week of Blue Apron Meals

No recipe again this week. Since my schedule is still crazy and I’m gone more dinner times than not, the DH wanted to try something new – that’s *shocker* not delivery. Well, *technically* Blue Apron is delivery, but you get the point. It’s not takeout Indian or a frozen pizza. 

I’m sure you’ve all heard about Blue Apron a million times, but here’s the short version: you sign up for a weeks’ worth of meals (we did the 2-person 3 meal version), and they deliver a box with recipes + all the ingredients you need to make them (minus staples like oil, salt & pepper). You waste nothing but packaging (and Blue Apron at least packages with an eye toward making as much of it recyclable as possible), and get 3 perfectly portioned meals out of the deal. It’s a win-win for people who don’t want to grocery shop and/or need recipes to follow. The DH is a great cook, but he hasn’t had to think up something to make for dinner in a decade and he doesn’t really flex his cooking muscles that often since I’m the primary meal provider in the house. Blue Apron gave him a chance to exert a little independence over dinner – and me a chance to eat something home-cooked I didn’t have to jam into my packed schedule.

This is our second box from Blue Apron – we’re giving it a three-box try before passing final judgement on whether this is something we want to continue doing. Blue Apron has no idea who I am and this series of posts are not sponsored.

What We Got

This week’s meals featured three non-beef meats and were all delicious. Like last week, these meals are all much more grain-heavy than I like to eat, but they were exactly what the DH wanted (he prefers grains and other carbs in his diet).

Meal 1: Curried Catfish & Coconut Rice


This was some delicious fish, and the chutney was a really nice touch. 

Meal 2: BBQ Pork Burgers & Corn on the Cob


Another winner. The burgers were juicy (though we subbed out the BBQ sauce – BA’s sauce was really generic-tasting), the onions were a great touch, and while the corn serving looked small – this meal still racked up 800 calories.

Meal 3: Spicy Chicken & Korean Rice Cakes


This was sweet, sticky and delicious. The chicken was of really nice quality, too – and the corn was an unexpected little treat.

This Week’s Verdict

Definitely tasty, definitely more carbs than I like, but good. The DH is still kind of liking cooking (though he’s coming to hate prep work even more), but this week was a little less exciting than last week. Fish Mondays are still really appealing, though. We shall see what Week 3 brings.

Meal 1: Brown Butter Cod with Corn, Shishito Peppers & Purple Potatoes


This was delicious. A little over-salted (the recipe calls for salt at every step but doesn’t caution that salt compounds with each addition), but delicious. The cod was cooked perfectly, the butter sauce was interesting (sherry vinegar added a nice counterpoint to the richness), the shishito peppers leant a nice textural dimension, and the potatoes were crispy and perfect. The DH complained a bit about the amount of prep involved with this one – he’s finicky with his knife skills and the 3/4 lb. potatoes cut into 1/4-inch rounds(he went thinner) took a lot of time and caused a lot of aggravation.

Overall, this meal was delicious – despite the salt issue – and is something we would definitely eat again.

Meal 2: Lemongrass Chicken Burgers with Hoisin Mayo & Roasted Potato Wedges


This was another hit. The DH said they were the tastiest chicken burgers he’d ever had. This meal was lighter on prep, which the DH appreciated, but no less tasty than the night before. Crispy potatoes, a nice soft bun, tasty mayo with an interesting flavor profile, and lemongrass chicken. Nothing to complain about here.

Meal 3: Seared Pork Chops & Plum Salsa with Corn, Kale & Farro Salad


This one tasted exactly like something I would make. It was the DH’s least favorite of the three, and the one I was the least thrilled about carb-wise (farro just seems so much more carb-y than potatoes in my mind – especially since I haven’t really had a “grain” like that in who knows how long). BA actually mistakenly sent us ground pork instead of chops for this dish, so our version turned out more like one of my meat + veggies bowls than the plated restaurant meal from the picture. While I liked the plum salsa for this dish (the DH wasn’t even going near it), I would have liked a little more bright acid to bring the flavors up.

Still a good meal, but not the DH’s favorite and the furthest from what I need to be eating. A damn site better than delivery, at any rate.

Verdict

Not bad. The price isn’t horrible ~$10 a meal – which is about what I’d spend on a big salad and about what the DH would spend on delivery Indian. While this type of dinner is right up the DH’s alley, I would prefer it if the meals were paleo-friendly. We are looking for an alternative that caters to both types of eater that won’t also break the bank on shipping to offer a comparison, but for now we may end up ordering another box or two while my schedule is in flux. I can’t continue to blow my macros for long, but for now it’s a good experiment. And, I’m enjoying having dinner prepared for me + actually eating a serving size, since I’m incapable of cooking or serving that amount on my own. This Blue Apron business may actually end up making me a more efficient and cost-conscious cook.

Visited The Cloisters today with a fellow Nerd and rucked Fort Tryon Park a bit. 

The Cloisters is a huge castle thing in the middle of the woods up at the northern almost tip of Manhattan. The museum was built in 1938 – basically to hold 1 guys’ collection of European Medieval religious art and artifacts. The collection spans both Romanesque and Gothic style art (including that famous unicorn tapestry) and architecture, including parts of 4 monasteries/abbeys, and recreations of historical gardens. More

This is all set in the backdrop of Fort Tryon Park – 67 acres of “wild New York” (natural NY habitat – hilly, rocky and covered in trees) park created around the time the Cloisters was built (both by Rockefeller). The park was full of dogs & joggers and is said to be the best hiking in the city. More

Miso Orange Slaw

This quick and tangy side goes well with some simple chicken or pulled pork.

Gluten-free, vegetarian, vegan if you watch your ingredients


Miso Orange Slaw

Based on Crunchy, Creamy Miso Slaw by Health-Bent

1/3 to 1/2 head red cabbage
2 Tbsp. mayo or aioli
2 Tbsp. rice vinegar
2 green onions
2 Tbsp. white miso
1 – 2 clementines

Couple big pinches Kosher salt

Few cracks black pepper

Add the miso, mayo and rice vinegar to a big bowl. Whisk to combine.

Slice the cabbage into ribbons, chop the green onions, and segment the oranges. Add to the bowl. Toss, hit with salt and pepper, toss, taste, and adjust seasoning if necessary. 

In quantities listed, serves 1 – maaaybe 2

A few weekends ago, the DH and I decided to break out the “big” cameras and go for an old fashioned photo crawl. We haven’t been on one of those in ages.

Red Hook is crazy scenic – lots of texture, grit and graffiti to shoot; and lots of art and a strongly independent vibe to soak up. This neighborhood has been (and continues to be) a lot of things – the very least of which is home to IKEA. Red Hook might be a pain in the ass to get to via the subway, but it’s bustling full of great food, indy shops, artisans doing what they do best, and green spaces. Definitely worth checking out, at the very least.

Red Hook Photo Crawl – Part 1

This is Part 1 of a two-part series.

A few weekends ago, the DH and I decided to break out the “big” cameras and go for an old fashioned photo crawl. We haven’t been on one of those in ages.

Red Hook is crazy scenic – lots of texture, grit and graffiti to shoot; and lots of art and a strongly independent vibe to soak up. This neighborhood has been (and continues to be) a lot of things – the very least of which is home to IKEA. Red Hook might be a pain in the ass to get to via the subway, but it’s bustling full of great food, indy shops, artisans doing what they do best, and green spaces. Definitely worth checking out, at the very least.
