Today was another good day. I felt like I ate enough – turns out I did not fat-wise after dinner – and I was fine hunger wise.

Were out at Grand Central Station, popped into the food court to a place called Tri Tip Grill. Had ridiculously delicious grilled tri tip with some roasted veggies, horseradish & au jus.

Note: we did not eat the corn or half the carrot – we split the veggie tray.

Today was great. Took the pup for a light hike an hour and a half north of the city, grabbed a convenience store lunch because it’s too cold to eat outside and we planned crappily, and had an overall good day.

Scrambled eggs with a tablespoon heavy cream before we left + coffee with almond milk while on the road.

Lunch

Gas station haul. Quest bar (4g net carbs), Choula flavored jerky (3g net carbs) & smokehouse spicy almonds (4g net carbs).

2 Boars’ Head spicy sausages + roasted garlic sauerkraut

Today was great. I felt good and we even managed to eat compliant while wandering Chinatown.

Cacao sun butter smoothie + grande almond milk cafe misto.


Lunch

Went out for Chinese hot pot. Like Shabu-Shabu from Japan, hot pot consists of a big bowl of broth heated at the table – you add meat, veggies & noodles and cook as you go.

The place we visited was all-you-can-eat, and included your choice of starch (which we forewent) and a selection of 12 ice creams (we reluctantly forewent).

We had spicy thai pork broth & spicy beef broth with:

Pork belly (bacon)

Sirloin 

White fish

Ribeye

Pork shoulder

Shrimp

Bok choy 

Chinese spinach

Enoki 

Radish

Lotus 

Broccoli

And peanut sesame oil + black vinegar garlic sauces I made.

Keto Pecan Stuffing

I was so excited about this recipe when I saw it on Pinterest. 

This is pretty much everything I want in stuffing – with none of the cloyingly dry grossness that is the bread.

Keto Pecan Stuffing
Based on Low Carb Pecan Stuffing by Simply So Healthy

4 ribs celery
1/2 a white onion
8 – 10 ounces pecans
Fresh sage
Fresh rosemary
1 Tbsp. fat of choice (I used bacon fat)
1 Tbsp. unsalted grass-fed butter
Himalayan salt & black pepper

Thinly slice the celery and dice the onion. Add to a large pan with the Tablespoon fat over medium heat. Sautée until the veggies are softened.
While the veggies work, mince the herbs (you’ll want 3 – 4 Tbsp. in total).

When the veggies are softened, add the herbs, pecans and butter. Sautée until the pecans are starting to burn. Hit with salt & pepper to taste.

Want to take this stuffing from delicious to ;)&(@,!?)’ delicious? Add the drippings from a turkey and cook an additional 3 – 5 minutes. This dish is great without, but with …. holy shit, this is good.

Serves 4 or so as part of a big holiday spread.

Today, we successfully navigated a holiday. Turkey Day was a hit.

Pre-gamed my green smoothie before starting the heavy cooking.

It’s a holiday. I didn’t *want* to plug everything in (read: I was too lazy). I will say this: I probably didn’t hit 20 carbs, I most likely went over on protein, I ate bunches of fat with everything but probably didn’t get enough, and my food was damn satisfying.

Today was good. Felt good – digestion was back to normal – and although I was starving cstartung at 4pm and continuing until my second snack, life was fine.

Back to my big salads! The last of the chicken breast (good thing too, the chicken was on its way out), Rosemary dressing, mixed greens & hemp hearts.


Dinner

I’ve been suuuuuuper productive all day and have done little but watch YouTube. It’s been a Texan In Tokyo kind of day and I was feeling Japanese.

Made this quick bonito broth, steamed cauliflower & frozen spinach soup with pan-seared salmon and sesame oil drizzle.


Snack

Today was full of willpower triumph.

Breakfast

Today’s smoothie was chocolate sun butter. I missed my spinach.


Lunch

Totally forgot to take a picture, but today I had a lunch meeting at an Indian buffet. Normally, I’d be reaching for the naan basket and all up in a plate of every variety of non-lentil dish available. With a tiiiiiny side of rice.

And gulab(sp) – the dessert that looks like a doughnut hole swimming in syrup.

But not today.

Today, I stuck to tandoori chicken, a vegetarian spicy cabbage side, and the iceburg salad. I ate way too much protein, and most likely a little too many carbs given my breakfast smoothie, but damn it was delicious. 

Delicious, but TMI – my digestive system was not prepared for the level of spice and restaurant-ness of the food.

Dinner

I was supposed to have a non-fairly Keto waffle & pork Rind crusted chicken sandwich, but I had no more protein left in my macros, and the batter got stuck in the waffle iron – so I had pancakes with butter. The pic is the DH’s dinner – complete with the chicken.

Had planned to have some lemony fat bombs, but was not hungry after all.

Today was fine. No health issues and I was mostly not hangry.

A Big Ass Salad of: Italian mix greens, baby spinach, a little cruciferous crunch, green onions, sliced chicken breast, hemp hearts & creamy Rosemary dressing. Delicious.

Dinner

Made a quick little dinner of more sliced chicken, frozen broccoli & a hand full of chopped pecans cooked in bacon fat and butter. 

Apparently, all I want to eat on keto is chicken & broccoli and chicken & guac. I’m cool with this.

Today was good. Had a bit of nausea because I layed in bed too late without eating breakfast, but other than that I felt fine.

Went to one of our favorite brunch/lunch spots and got a veggie omelette with sliced tomatoes on the side and coffee.

Another guac & chicken bowl – this time with some crazy good fresh kraut we grabbed at a food/craft fair.

Made another type of fat bomb – Sunflower seed butter.

Also had 1/4 cup raw almonds.
